Almost the World’s Best Guacamole

fresh low sodium guacamoleWhile 3/4ths of the calories in an avocado come from fat it’s almost all in the form of oleic acid, a monounsaturated “good” fat that lowers the level of bad cholesterol in your blood and lowers your risk of heart disease and stroke.  They also contain more potassium per weight than bananas.  This Almost the World’s Greatest Guacamole Recipe is a nearly perfect way to enjoy them.

In this guacamole recipe the rich avocado  is combined with the sour flavor of lime juice and the bite of shallots, cilantro, and jalapeno.  Tomatoes and garlic round out the flavors and add to the fresh veggie goodness!

Note: if you take Potassium Sparing Diuretics including the commonly prescribed medication Spironolactone your doctor will probably be monitoring your potassium to make sure it doesn’t go to high.  As avocados are loaded with potassium check with your doctor if you have any concerns.

Tip: How to pick a properly ripe avocado

Avocados should be firm but give gently under pressure. Definitely not the overly squishy avocados with the bright orange “Ripe” sticker on them. Those are far too gone for this Guacamole.

Tip: How to slice an avocado

With a sharp chef’s knife slice from the stem to the base then around to the other side. Holding one side in each hand twist to remove one half. Carefully hold the knife just above the pit and strike downward to embed the knife’s near edge into the pit. Twist sideways to release the pit and discard it.

For guacamole, use a large spoon to scoop the flesh from the skin.

Ingredients
  • 2 Avocados, firm yet somewhat pliable
  • 1 clove of garlic
  • 1 shallot
  • 1 head of cilantro
  • 1 lime
  • 1 roma tomato
  • Heart healthy salsa (our Roasted Tomato & Mango salsa for instance)
  • 1 jalapeno
Instructions
  1. Combine all ingredients and mash with a spoon until chunky but evenly mixed.
  2. Enjoy with no-salt added tortilla chips.
